Kirin Fuji Single Malt Japanese Whisky

Tasting notes from the producer

While most other Japanese distilleries adhere to the methods of Scotland, the Mt. Fuji Distillery draws inspiration from major whiskey producers worldwide. This influence is evident in their tri-part blend, crafted using three distinct distillation methods, each imparting its own unique flavor profile. Though the precise mash-bill remains undisclosed, the spirit's foundation is rumored to be a 'Canadian style' grain, distilled batch-wise in a kettle still. Complementing this is a Bourbon-style distillate, utilizing a Doubler, and a third distillation reminiscent of Scotch-style light grain, processed through a continuous multi-column still.

This triumvirate of techniques results in a complex array of flavors. Fuji exhibits malt-like aromas, accented by creamy soda and vanilla malt notes, accompanied by subtle fruity undertones of stewed pears and caramelized apples. The palate is rich and full-bodied, defying expectations with its generous mouthfeel. Layers of vanilla wafer overlay a canvas of poached orchard fruits and warm wood spices, segueing into hints of dried banana and a delightful flourish of American oak on the finish, evoking a Bourbonesque or light rye character.

Initially exclusive to bars, this release became available to the wider Japanese market in early 2021 before reaching international shores—a development welcomed by enthusiasts. With its exemplary mouthfeel and distinct flavor profile, this single grain whiskey warrants broader recognition. Bottled at 46% Alc./Vol. and non-chill filtered, it promises an exceptional drinking experience.
